1 avocado peeled, stoned and mashed
1 large clove garlic, peeled and crushed
1 tsp salt
¼ tsp freshly ground black pepper
1 large tomato, skinned and chopped
1 tsp olive oil
1 tbsp. lemon juice
2 -3 sprigs fresh green coriander leaves finely chopped
1 small onion, peeled and grated
Blend avocado pulp in the blender with the salt, pepper, tomato, olive oil, lemon juice and coriander leaves. Put into a small bowl and mix with onion.

Serve with tortillas or sticks of raw vegetables.
