Moussaka with tofu

250 g tofu
2 – 3 tomatoes
3 eggplants
50 g shredded Swiss cheese
2 eggs
20 cl soy milk
4 Tbsp olive oil
1 onion
1 garlic clove
Salt, pepper, oregano and tarragon
Cut the eggplants lengthwise in thick slices.
Place them 2 minutes into the boiling water.
Drain them.
Heat the oil in a frying pan and grill the slices of pre-cooked eggplants until golden.
Preheat the oven with thermostat 5 - 6 (185 -205°C).

In a pot, grill the cut tomatoes, the chopped onion and the garlic, then add the crumbled tofu.
Flavor with oregano, tarragon, salt and pepper.
Let cook a dozen of minutes.

Garnish the bottom of a dish with some slices of eggplants and cover with the preparation made of tofu and tomatoes.
Proceed by successive layers until everything is used.

Mix the eggs and soy milk.
Pour this sauce on the dish and sprinkle with shredded Swiss cheese.
Cook in the oven for ½ h (thermostat 6 or 205°C)
