Spicy grilled eggplant |

9 eggplants 6 Tbsp. olive oil 3 garlic cloves, minced 1 Tbsp. red wine vinegar ¼ tsp. red pepper flakes 2 Tbsp. chopped fresh parsley salt and pepper |
Cut the eggplants into thick slices (1 cm). Brush the slices with 4 Tbsp. of olive oil. Season with salt and pepper. Arrange the eggplant slices on a baking sheet, in a single layer. Bake to the top rack of a 200 C oven, turning occasionally, until golden on both sides, about 15 minutes. Meanwhile, in a small bowl, stir together the garlic, the remaining 2 Tbsp. of olive oil and the vinegar. Place the eggplants in a serving platter and drizzle the garlic-oil mixture over the top. Sprinkle with the red pepper flakes and parsley and serve. |
