3 ripe bananas 8 slices of whole wheat bread 125 ml soy milk
2 eggs
1 tsp vanilla extract
1 tsp ground cinnamon
Sunflower oil
Sugar or maple syrup (optional) |
Peel and slice bananas into a small bowl; mash with a fork.
Spread 4 slices of bread with the mashed bananas.
Top each with the remaining bread and press down gently to seal.
Heat the oil in a large skillet.
In a large bowl combine soy milk, eggs, vanilla and cinnamon.
Place sandwiches in eggs mixture. Turn it so both sides are saturated with the mixture.
Place sandwiches in the skillet and cook until golden. Turn and cook the other side (3 minutes each side).
When you serve them you can powder them with sugar or add a little bit of maple sugar. |
