Apple Muffins (12 muffins)
300 g flour
80 g sugar
2 tsp. baking powder
1 tsp. cinnamon
½ tsp. baking soda
¼ tsp. nutmeg
200 ml milk or soymilk fortified with calcium
150 g chopped apples
Preheat the oven to 180 °C. In a bowl, stir together all dry ingredients and make a well in the center. In another bowl, mix the milk, oil and the egg. Add all at once to the flour mixture. Stir 3 or 4 strokes. Add apple. Stir just till moistened. Spoon batter into muffins cups filling each cup 3/4 full. Bake for 20-25 minutes.
