Spiced bulghur with olives |

160 g bulghur 65 g raisins 1 small lemon ½ orange 8 black olives ½ tsp. cinnamon ½ tsp. coriander 1 ½ Tbsp. olive oil Parsley Salt and pepper 1 stick cinnamon |
Soak the bulghur one hour in cold and salted water, then drain.
Chop the parsley. Pit the olives and cut them in four. Rinse the raisins. Add all the ingredients to the bulghur. Press the lemon and orange. Add the olive oil to these juices. Pour into the bulghur. Add the cinnamon, coriander, salt and pepper and mix well. Place in the refrigerator one hour before serving and garnish with half a stick of cinnamon. |
